If coffee has a spiritual home, it's the forests of Ethiopia where the plant originated. This lot comes from the Kochere district of Yirgacheffe, where heirloom varietals grow at 1,950-2,100 meters among indigenous shade trees. The washed process highlights the extraordinary aromatics these ancient genetics produce—expect an explosion of jasmine and honeysuckle in the fragrance, bright bergamot and lemon citrus in the cup, and a delicate tea-like body that makes this coffee impossibly drinkable. We roast light to preserve the floral complexity; this coffee shines as pour-over, Chemex, or Aeropress. Not recommended for milk drinks—the delicate notes get lost. Sourced from the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), representing 300,000 smallholder farmers. Limited seasonal availability.
